The Institute has courses ranging from apprenticeships and certificates in commercial cookery, baking, patisserie and butchery to food science and technology diplomas. The Institute also offers vocational hospitality, hotel management, tourism and events programs at certificate, diploma and advanced diploma level.

There are specialist degree programs that provide students with a balance of specialised knowledge, business skills, industry insights and real world experience across the foods, tourism, hospitality and events specialisations.

The Certificate III in Hospitality combines entry-level practical food and beverage skills and relevant theoretical knowledge.The Diploma of Hospitality Management provides students with a broad understanding of hospitality, and begins to explore in substantial depth, concepts relating to: wine knowledge, business operations, hospitality budgeting, workplace diversity, legal knowledge for business, rostering, and service quality.The Advanced Diploma of Hospitality Management qualification further develops students understanding in the areas of: business planning, financial operations, managing human resources, marketing strategies and property management.

Certificate IV in Commercial Cookery

Commercial Cookery programs at William Angliss Institute cover a wide range of content from introductory knife skills, produce dishes using basic methods of cookery, preparing stocks, soups and sauces, preparation and cooking of seafood, poultry, meat, cakes, pastries, breads and desserts. Further complex areas of study include plan and cost basic menus, prepare food to meet special dietary requirements and food safety compliance. The focus of the programs is on the development of practical skills in state-of-the-art kitchens where students will learn speciality subjects such as Produce and serve food for buffets and cooking specialised food items. Theory subjects will include occupational health and safety, and hygiene and food safety regulations, which are incorporated into day-to-day training. The Certificate IV in Commercial Cookery, in particular, allows students to gain a firm understanding of the management of the kitchen environment.

Certificate IV in Patisserie/Certificate III in Commercial Cookery

Graduates of this dual qualification will be equipped with skills in both commercial cooking and patisserie techniques. Students will learn fundamental skills and develop knowledge in a wide range of subjects to become job-ready. This course will provide students with hands-on experience in areas from the preparation and cooking of meats through to cost effective menu development. Students will also acquire an understanding of the fundamental skills required to commence a career in patisserie. Students will complete training across a variety of topics from basic methods of cookery through to decoration of cakes and cookies, hot and cold desserts, and petit fours. The course is delivered on site and with industry participation to create a blend of knowledge and practical experience.Upon completion, students will be provided with a nationally recognised certificate which will provide opportunities to find employment in various national and international enterprises.

Diploma of Hospitality Management

The Angliss International Hotel School program is an intensive course delivered on campus and via an industry placement. With a focus on the provision of luxury services, students will be equipped with the knowledge and expertise to work in the world's finest hotels. Students will benefit from exposure to our leading hotel partners by participating in a hotel industry placement during the third study period of the course. This hotel placement may involve exposure to various roles such as food and beverage service, housekeeping, front office operations and concierge. Students will undertake supervised training in areas including operational management and planning and leadership. With exposure to masterclasses covering the finer and more specialised areas of hotel service, students will be equipped for a career offering exceptional service in the international hotel industry. Students also have the option of participating in an international study tour.

The Bachelor of Resort and Hotel Management provides students with the knowledge to lead and manage in the resort and hotel industry and to find innovative solutions to complex problems. Bachelor of Resort and Hotel Management (International Practice)

The Bachelor of Resort and Hotel Management (International Practice) is a four year qualification that offers students the opportunity to challenge the current status quo in the resort and hotel industries. Graduates will have the core knowledge and skills required to operate and leverage technology for increased efficiency and the design of enhanced customer service experiences. Research and scholarly skills to support future academic pathways such as master level studies are embedded in this qualification. Central to this qualification is the internationalisation of the final year study experience. Through a tailored study tour students will experience the dynamics shaping the globally. These experiences will form the basis of an industry based research project, the first step in a management career. Students will either engage in a six-month work placement in an international location or complete six months study at one of our international partner institutes.

Bachelor of Culinary Management

This qualification integrates experiential learning with academic rigour to prepare students for working in the lively world of the culinary industries. From culture and cuisine to wine and artisanal products, graduates have the broad knowledge and specialist skills to become innovative professionals in the field. Specialist food and wine knowledge is underpinned by a comprehensive management stream, bringing together the theoretical and practical dimensions of culinary management. Students can further pursue their areas of interest through a range of electives. Experiential learning and sensory engagement are essential components of this qualification. Cookery demonstrations and culinary experimentation in the classroom put theoretical concepts into practice, while leading chefs and other industry experts share their passion and knowledge. Food scientists and technologists are employed in food, confectionery and beverage manufacturing. Employment may involve production, food processing, development of new products, and/or the implementation/maintenance of quality and food safety programs. Our course equips students with essential practical skills and underpinning knowledge to work in the food processing industry. Outcomes include laboratory work, production supervision, quality control management, new product development and food safety auditing. Past graduates are employed as food technologists in food manufacturing companies such as Nestle, Kraft Foods, Black Swan Dips, International Flavours and Fragrances, Betta Foods, ABC Blending, Flavourmakers, Kerry Ingredients and McCormick Australia.

Certificate III in Aviation (Cabin Crew)

The Certificate III in Aviation (Cabin Crew) will prepare students for a successful career in the Aviation Industry. Students are equipped with the skills and knowledge required to ensure outstanding levels of leadership and diplomacy. A combination of practical and theoretical subjects will allow students to develop the ability to create a working environment that will motivate a team of cabin crew to lead by example, communicate effectively, provide guidance, uphold the highest level of safety and security and ensure all legislative and regulatory requirements are followed. The Bachelor of Tourism (Marketing) engages with marketing and research principles as they apply to the travel and tourism context. Bachelor of Tourism (Ecotourism)

The Bachelor of Tourism (Ecotourism) caters for those students with an interest in environmentally sustainable and culturally responsible forms of tourism. Students will develop a thorough knowledge of some of Australia’s most popular natural landscapes and acquire the skills necessary to design and deliver memorable wilderness experiences for visitors through well-developed interpretation skills.Experiential based forms of learning outside the classroom are a key feature of the course and allow students to apply the knowledge they have developed throughout their studies. Many subjects offer students the opportunity to engage with the tourism industry with field trips to many of Victoria’s most significant nature based tourism destinations such as the Grampians as well as a week-long study tours to iconic destinations like Kangaroo Island.
